Peaches For You, Peaches For Me

Here is a delicious way to use serve up the last peaches of summer and keep it light!
Peaches and Cream Pie
Reduced Fat Graham Cracker Pie Shell
Filling: 4 oz Light Cream Cheese 1/2 C Powdered Sugar 1/2 C Light Cool Whip
Topping: 3 oz Sugar Free Peach Jello Mix 3 oz Cook and Serve Vanilla Pudding Mix 1 1/4 C Water 2 C Fresh Sliced Peaches, Pitted
In a small bowl, mix cream cheese and powdered sugar, then fold in Cool Whip and spread mixture over crust. Refrigerate until set. For the topping, combine jello and pudding in small sauce pan, add water and heat to a boil, stirring constantly on medium high heat. Remove from heat and cool 5 minutes. Arrange peach slices over filling and spread jello mixture over everything. Refrigerate several hours, until set.
