Mom's Enchilaldas

This enchilada recipe is family and budget friendly. They are one of my favorite things my Mom would make for us growing up and now I make them for my husband. I "healthify" them with a few tweaks to make them waistline friendly, too. They are also excellent for leftover lunches the next day.

Here's what you need:

1 lb ground turkey or chicken 1 packet taco season (or use your own taco seasoning mix) 1 onion, chopped 1 can fat free refried beans Flour tortillas 2 small cans enchilada sauce 8 oz reduced fat shredded cheddar

Here's what you do: Preheat oven to 350 degrees. Brown your ground turkey with chopped onion. Add taco seasoning with a couple of tablespoons of water or salsa. Add refried beans and combine until warmed through. Spray a 9 x 13 pan with cooking spray. Fill flour tortillas with about a half cup of meat mixture each, roll up and place in pan. Cover with enchilada sauce. Bake 20 minutes. Tope with shredded cheese and bake an additional 5 minutes. Serve with salsa, sour cream, lettuce and tomatoes.
